Easy and Healthy Shredded Chicken Recipe
This was served at Baby's 1st birthday party as part of a burrito bar and the feedback received was incredible... if people only knew how easy it is to make shredded chicken!
The recipe, my friends:

1. 2 lbs of chicken breast (Organic/ Hormone Free, of course!)

2. 16 oz of fresh salsa (jarred salsa is okay too, just make sure there isn't any additives in it)

3. 6 garlic cloves, chili pepper, cumin, and salt to taste (approx 2 tsp of chili pepper and cumin, tiny bit of sea salt)

*throw contents together in a crock pot and set on high for 4 hrs (or on low for 6). Half an hour before serving, shred chicken and throw back into crock pot to absorb all the juices.

*I suggest to double the recipe and freeze the remains for future use as enchilada meat, burrito bar, etc. Makes a great topping for salad (as seen above--add sprouted black beans, pico de gallo, some avocado, cheese, and sour cream...mmmm)
